I can’t believe it is already Thanksgiving week! On my way in to work this morning, it was snowing and super icy. I was chatting with a co-worker walking into the building about how it felt like we didn’t even had a summer! This year has flown by!
Thanksgiving is my second-favorite holiday, right after my costume/candy/make-believe Halloween! I love that it is a more laid back holiday (except for my parents who make and serve dinner for around 45+ people…).
I love that there isn’t the stress surrounding Christmas. We just hop on up to my dad’s house and stuff ourselves, relax and chat with family, and head home in a food coma.
I look forward to Thanksgiving dinner all year. Here are some of my favorite things to eat and bring to dinner, and some things I’d like to try someday when life is a little less hectic!
My favorite things to eat:
Stuffing
I look forward to stuffing all year round. I have no idea what recipe my step-mother uses, but it is always delicious.
No-Boil Mac-n-Cheese
My sister makes two huge vats of these every year, and every year they disappear in a blink! I don’t have her recipe, but I’m pretty sure it is the one attached, or very similar.
Favorite things I have made/brought:
Mini Pumpkin Cheesecakes
I made these a few years ago and they are so easy, and so, so delicious!

No photo on the recipe page, but these look like them…
Donut Hole “Acorns”
I made this one year to take to Thanksgiving, but while they were delicious and a huge hit, they were SO tedious to make. This may have been a one & done… at least until Harlow is old enough to help. It would probably be really fun to do together!
Pumpkin Roll*
A lady at my work makes these, and I’ve bought one every year. They are sooooo amazing. I have no idea what recipe she uses, but here are a couple…

Let me see that pumpkin roll To the left, to the left… okay, I’m done…
Things I have “Pinned” and want to try in the future.
Pumpkin Spice Latte Cupcakes
Peekaboo pumpkin pound cake
Mini Caramel Apples
What are your Thanksgiving favorites?
Perfect treat!
