Chickpea “Tuna” Salad Recipe

Yesterday I got a craving for “tuna” salad.  I hadn’t made my chickpea “tuna” salad in… well, maybe a couple of years!  Fortunately, I had all the ingredients on hand, so I whipped some up during my lunch hour.

Some of these ingredients are approximations.  I just sort of threw stuff in until it looked good.
  • 2 cans chickpeas, rinsed
  • 2 stalks celery, chopped
  • mayonnaise (or Vegenaise® to make recipe vegan) to taste.  I used maybe 1/2 cup?
  • 1/4 – 1/2 cup chopped onions
  • Tablespoon of dill relish
  • 1/2 cup prepared quinoa (I had some left over from soup, so I threw it in there for some added oomph)

Dump chickpeas, celery, onions, and quinoa in a food processor.  Pulse until at desired consistency.  Scoop into a large bowl, and add may & dill relish.  Stir, and enjoy with crackers, on a bed of lettuce, or as a sandwich.

So I got sucked in to taking short quizzes today on Bitecharge.com.  I had never heard of it, but a friend posted on Facebook about one of the quizzes, so I checked it out.  A total time suck, but fun!

I found out my destined profession is to be a writer (yeah, that has worked out so well…it was my first major in college) or a designer, and I’m supposed to be living in Seattle (don’t I know it!?! I’ve allllways wanted to live there).
